I’ve always loved pinwheels, no matter the filling. And I always admired people who are able to bake these cookies. To me it seemed like this deliciousness would require some complex baking skills, lots of patience and great gifting. These poppy seed rolls look so fancy and sophisticated, one must be a super baker to make them, right?

Well, turns out I was wrong. These poppy seed pastry cookies might look difficult to make but the truth is, they’re pretty easy peasy. And boy, they are so delicious! I love how crisp these turned out and not too sweet, my daughter was simply in love with them. I must say I was very surprised at how easy it is to make them.

Not only are they easy to make but the puff pastry dough makes these cookies pretty fast too. I made these poppy seeds pinwheels in under 30 minutes! They’re great for a last minute treat or if you have unexpected guests popping by.

What do you need to make poppy seed rolls?

Besides the puff pastry dough, all you need are some poppy seeds, butter, sugar and milk. That’s it! I must admit I was very surprised by the simplicity of this poppy seed roll recipe. I’ve never imagined those few ingredients would make such a delicious cookie!

The sugar syrup, oh man! It is to die for! Not too sweet but just perfect, in my opinion. The sugar syrup and the poppy seeds make such a nice pair. I can see a slight addiction forming in the near future (hope not though with all those carbs and stuff).

Poppy seeds are available in the produce department of your grocery store or you can buy them online, they’re also referred to as poppy seed pods or poppy seed shells.

I used store bought puff pastry for these pinwheels and it’s pure heaven when baked this way!

What is this poppy roll filling made of?

Butter, sugar, poppy seed and syrup are all you need to make the filling. You can also add some orange or lemon juice, it will give the poppy seed filling an amazing boost in taste!

I made my own sugar syrup with milk and sugar but if you’re short on time, you can use store bought simple syrup.

Mix the filling ingredients together and spread evenly over the dough.

Ingredients

  • 3 puff pastry sheets

For the filling

  • 2 sticks butter
  • 1/2 cup sugar
  • 2 tsp vanilla
  • poppy seeds as preferred

For the syrup

  • 1 cup milk
  • 1/2 cup sugar
  • 1 tsp vanilla

Instructions

To make the filling

  • In a saucepan, melt butter

  • Add the sugar and mix until completely dissolved, on low to medium heat to prevent the butter from browning.

  • Add vanilla and set aside. Allow to cool until you are able to touch with your fingers.

To make the rolls

  • Open one of the pastry sheet and gently roll it out.

  • Use the pastry brush to spread some of the butter mix over the entire surface.

  • Sprinkle poppy seeds liberally.

  • Roll the pastry as tight as possible and place in a freezer friendly container. Place in the freezer for half an hour.

  • Repeat for all pastry sheets

  • Meanwhile make the syrup and line the cookie sheet with baking paper.

To make the syrup

  • In a saucepan, heat the milk

  • Add the sugar and mix until sugar is completely dissolved, keeping the heat on low to medium.

  • Add vanilla and set aside.

  • Pre heat the oven at 375 F

  • Remove the logs from the freezer and immediately cut into slices

  • Place the slices in the cookie sheet (poppy filling up) and brush with the sugar syrup.

  • Bake for 10 minutes then brush more syrup and sprinkle more poppy seeds.

  • Bake for additional 5 minutes or until the rolls are golden brown.
