Aloo gobhi gajar matar ki sabzi|Mix veg sabzi recipe: mix veg is very popular in north India, if you order veg thali you will get mix veg in it, if you will visit any wedding in north India you will get mix veg sabzi for sure.

Dal makhni, dal fry, raita, mix veg sabzi, matar paneer and shahi paneer is the first choice of every vegetarian person in India.

Aloo gobhi gajar matar ki sabzi is more popular in winters because carrot(gajar) and peas(matar) are freshly available at the time of winter in India.

This recipe is similar to dhabha style or you can say restaurant-style mix veg sabzi, but you would think that how it is similar to restaurants or dhabha style.🤔

Firstly, you would have noticed that veggies are always fried in the mix veg in restaurants rather than steamed or boiled. And secondly grated tomatoes, ginger, chilli and mustard oil gives more taste.

During this COVID situation, my mother doesn’t want to order food from any restaurants she wants to prepare everything at home.

Me and my mother try to recreate the restaurant favourite food and experience restaurant-style food at home like bread pakoda, Nepali style momos, Gulab jamun and coconut barfi.

So prepare this mouth drooling and finger-licking sabzi at lunch or breakfast with paratha, roti or laccha paratha.

Top tips:

  • Peas pop while frying and it may burn you hard so put the peas in the oil and quickly cover it with a lid.
  • I would recommend you to use mustard oil rather than refined oil or canola oil. Mustard oil makes the sabzi more flavourful.
  • Don’t over fry the veggies. cauliflower, potatoes and carrot should be only golden brown from edges rather than whole.
  • You can also add beans, mushrooms and tomatoes in this sabzi.

How to make Aloo gobhi gajar matar ki sabzi:

Preparation:

1. Wash and chop all the veggies.

  • Peel the peas.
  • Cut the cauliflower into big florets.
  • Dice the potatoes and cut the carrot into batons or French fries shape.
  • Wash all the veggies.

Cooking:

2. Heat the oil and deep fry all the veggies one by one, the reason behind this is that every veggie take different time to fry like carrot and peas just need few seconds, likewise potatoes and cauliflower need a little bit more time than that.

3. Fry the cauliflower florets and potatoes until they get golden brown from the edges, don’t over fry it. For potatoes and cauliflower it takes 5 to 6 minutes to fry.

4. Carrot takes just 1 to 2 minute to fry not more than that and peas take less than 1 minute to fry. (❌ peas pop while frying and it may burn you hard so put the peas in the oil and quickly cover it with a lid)

5. Leave 3 tablespoon mustard oil in the kadhai and take out the remaining mustard oil. Heat the oil and add chopped onion, grated ginger and green chilli in it. Cook it on medium flame by stirring continuously so that the onion doesn’t burn.

6. When the onion get transparent which mean it is cooked then add grated tomatoes in it and cook it for 1 to 2 minutes at medium flame by stirring continuously.

7. Add salt, red chilli powder, turmeric powder and coriander powder.

8. Then add fried veggies in it and mix everything nicely. Add 1/3 cup water in it and again mix it well.

9. Cover the pan with a lid on low flame until the veggies are cooked and all the water is soaked. You can check if the veggies are cooked or not by poking a knife in it if it get inside then its cooked.

10. Garnish it with some chopped coriander leaves and restaurant style mix veg sabzi is ready to serve.

Ingredients

  • 1/3 cup peas (matar)
  • 1 cup cauliflower florets
  • 3 medium-size tomatoes(grated) or 1/2 cup grated tomatoes
  • 1 medium carrot (French fries shape)
  • 1 tablespoon grated ginger
  • 1 cup mustard oil
  • 1 big size potato (diced)
  • 2 green chilli (finely chopped)
  • 1 medium + 1 small onion (chopped)
  • 1 teaspoon salt
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chilli powder
  • 1/3 cup water

Instructions

  1. Cut the cauliflower into big florets, peel 1/3 cup peas, dice 1 big potato and cut 1 carrot into batons or French fries shape. Wash all the veggies.
  2. Heat 1 cup mustard oil and fry 1 cup cauliflower florets, fry it on medium to high flame for 4 to 5 minutes until the edges get golden brown, fry diced potatoes until the edges turn golden brown, potatoes also takes 4 to 5 minutes to fry.
  3. Carrot takes just 1 to 2 minute to fry not more than that and peas take less than 1 minute to fry.
  4. Drain all the fried veggies to kitchen paper towel to remove excess oil.
  5. Now in the same kadhai or deep bottom pan take off all the oil and leave 3 tablespoon mustard oil in it.
  6. Heat the oil and add 1 big+1 small onion chopped, 2 green chilli finely chopped and 1 tablespoon grated ginger. Saute it on medium flame.
  7. When the onion turns transparent then add 3 medium sized grated tomatoes and cook it for 1 to 2 minutes. Then add 1 teaspoon salt, 1 teaspoon turmeric powder, 1 teaspoon coriander powder and 1/2 teaspoon red chilli powder. Mix it nicely.
  8. Then add all the fried veggies in it and mix it well. Then add 1/3 cup water in it and again mix then cover the pan with a lid and low the flame.
  9. Cook it for another few more minutes until the water is soaked and veggies are cooked nicely.
  10. When it is cooked serve it with laccha paratha or roti.
